Ingredients:
4 1/2 cups chicken broth
2 cups water
2 boneless, skinless chicken breasts (I used rotisserie chicken and shredded it)
1 package of Rice-a-Roni long grain and wild rice
1/2 tsp salt (plus more to taste)
1/2 tsp pepper
1-2 cups diced carrots
1-2 cups diced celery
1 cup diced onions
Directions:
Combine broth, water, carrots, celery, onions, chicken, salt, pepper and rice (along with seasoning packet) in a large slow cooker. Cook on low for 6 hours or on high for 4 hours.
(I cooked this recipe on high for 4 hours and let it sit on warm for 30 minutes and it made it thick with out having to add cream or flour)
This recipe was SO SO good! Jeremy and I ate it all within 24 hours that I made another batch a couple days later!

SOO smart not to add the cream and flour! I wish I would have gone with my gut and not added it when I made it. I'll have to try it again now!

Rice-a-roni is sooooo bad for you can you make this without resorting to boxed foods...? Can't you just add regular rice and a few spices?
