Chicken and Potatoes Recipe {and recipe for left overs}

Chicken and Potatoes


INGREDIENTS:
3-4 boneless skinless pieces of Chicken
4 medium potatoes (peeled and cubed)
1 packet liptons onion soup mix
4 Tablespoons of butter
Garlic powder (to taste)
Pepper (to taste)
water 


DIRECTIONS:
Preheat over to 425 degrees
Spray pyrex with nonstick spray
Place chicken in pan
place potatoes around chicken
Pour water over potatoes/chicken
Pour soup mix over chicken and potatoes
add garlic/pepper (to taste)
Place cut up butter on top of potatoes/chicken

Cook until chicken is cooked through 
(45 minutes-60 minutes)

This dinner seriously was SO good! Olivia ate EVERYTHING!!!! 


We had a LOT of left over chicken since the pieces were SO big so we used the leftovers to make BBQ Chicken Pizza!

BBQ CHICKEN PIZZA

INGREDIENTS:
Leftover chicken (cubed)
BBQ sauce
Whole wheat tortillas
Chopped green onions
crumbled bacon
shredded cheese (I used cheddar/jack)



DIRECTIONS:
Preheat oven to 400 degrees
Put foil on pan
Place tortillas on foil
Spread bbq sauce on tortillas
spread shredded cheese
sprinkle cubed chicken, crumbled bacon and chopped green onions




Cook pizzas until cheese is brown/bubbling






Is this NOT a great way to use leftovers?!!
(AND this was ANOTHER hit with Olivia! She ate 2 WHOLE pieces!!!)

YUM! On both accounts! I like the idea of making the BBQ pizzas on tortillas like that to make the process quick and easy!

Okay this looks awesome {and easy enough I might even be able to make it!). But how much water did you use?
