With the colder weather we had this week, chili was the perfect meal! This recipe is SO easy and makes a LOT!
Ingredients:
1lb ground beef (I use lean)
1 medium onion chopped
garlic (to taste)
chili powder (to taste)
chopped basil leaves (to taste)
white pepper (to taste)
salt (to taste)
1 can diced tomatoes (could use "hot")
2 cans chili beans (I use mild but you could use medium or hot!)
Directions:
Take chopped onion and beef, mix together and brown beef with above seasonings.
While beef is cooking, take beans and tomatoes and throw in food processor. (I like my chili smooth, if you don't you can skip this step)
Once beef is cooked, drain and then add beans and tomatoes. Add more seasonings, if needed. (This chili is meant to be on the thicker side, you can add water if you want your chili not as thick.)
Cook on simmer, covered for 1 hour.
We eat our chili topped with a sprinkling of cheese and chopped onion!

We love our chili here too! our favorite is to put fritos on the bottom then the chili then top with cheese, sour cream & onions. MUST make some this weekend, I'm drooling on the keyboard!!

I love this! All my recipes say things like salt, pepper, onion or cook until its done. I'm making this as soon as summer decides to leave, hopefully that's soon.
