The week all my recipes were inspired by pinterest...


Sunday

Mexican Pie and Spanish Rice

This was prob my favorite thing I made the whole week! It was SO easy!
Recipe:
preheat over to 35o degrees
cook up 1lb of ground beef with chopped onions and taco seasoning
use 1/2 can enchilada sauce on bottom of pan
then put down soft taco shell (lay flat)
layer cheese, refried beans, can tomatoes with chiles and meat mixture
lay down another shell and repeat layering until all ingredients used
top with cheese and bake 25 mins

top with tomatoes, green onions and black olives. I dip in guac, Jer uses sour cream.

spanish rice:
I use uncle bens and sub water with veggie broth (I use swansons) and add canned italian tomatoes.


Monday


I did not like this recipe, too much cream cheese for my taste. This would be EXCELLENT using alfredo sauce!


Tuesday

I used angel hair pasta but I would def recommend the pasta they used because it does make a difference in the amount of starch in the water. (which you will need in the recipe.) I also added salt and pepper and a little more garlic then recommended. I would recommend also seasoning the shrimp before adding it to the pasta. overall this was good. Jer seemed to like it!

Wednesday
Chicken enchiladas

I used leftovers to make these. I shredded rotisserie chicken, used the left over enchilada sauce and tomatoes. These were easy to make and very yummy!

Thursday

Traditional Lasagna
(It looks funny because I cooked it on Monday but I guess I hadn't let it cool off long enough so when I pulled the top off my pyrex the top of the lasagna came with it! ) :(

I brown ground beef with chopped onions and italian seasons
boiled whole wheat lasagna noodles
then mixed pasta sauce, meat mixture and fresh cooked mushrooms in one bowl
mixed riccotta, parm, mozz cheese and italian seasonings in another bowl
then the layering began...
put pasta sauce on bottom of pan
put down 3 noodles
put down some meat mixture
put down some cheese mixture
repeated until 12 noodles were used
finished by putting cheese mixture on top
baked at 350 for 35-40 mins until cheese was bubbly and melted

Friday
LEFTOVERS!!
(or maybe takeout?) :)

I loved having homemade meals, but it did get exhausting cooking and doing LOTS of dishes after working FT! (along with having a clingy, teething baby who would cry every time I would put her down! ) At least this weekend I won't have to cook! We have LOTS of leftovers! :)
