Makes 12 servings
INGREDIENTS:
1 box cake mix (I used fat-free brownie mix)
1 15 oz. can of pure pumpkin (I used Libby's)
DIRECTIONS:
Preheat oven to 400 degrees
Pour cake mix into a large bowl and whisk to remove any lumps. Add pumpkin and mix until completely smooth and uniform.
**Don't add any of the other ingredients listed on the box, the mixture will be VERY thick, but do not add anything. **
Evenly distribute batter into 12-cup muffin pan lined with foil baking cups. ( I sprayed each cup with non-stick spray before putting in batter. ) Place pan in oven and bake until a toothpick inserted into the center of a muffin comes out clean. (about 20 mins depending on your oven)
1 Muffin: 181 calories
I ate mine as a dessert. I added a dollop of cool whip on top and a couple of tiny chocolate chips! Mmmm!!
