Loaded Baked Potato Soup Recipe

Today I took a sick day. I've caught the bug that has been going around and have been sick since late friday night/early sat morning. I've never used my crock pot before and figured today would be a good day to try it out. Homemade soup seems to help cure any ailment right? I combined a couple recipes given to me by some friends.


LOADED BAKED POTATO SOUP (CROCK POT VERSION)


INGREDIENTS:


2 LBS BAKING POTATOES (PEEL, AND CUT INTO ½” CUBES)

4 STALKS CARROTS

4 STALKS CELERY

1 WHOLE WHITE ONION

1.5 CUPS OF CHIVES

2 CANS (10.5 OZ) MUSHROOM SOUP

1 CAN CHICKEN BROTH 1 CUP OF MILK

1 CUP OF SOUR CREAM ¼ TEASPOON OF GARLIC POWDER

1.5 CUPS OF SHARP CHEDDAR CHEESE

1.5 CUPS CRUMBLED BACON BLACK PEPPER TO TASTE

1-2 PINCH’S FLOUR TO THICKEN UP (AS NEEDED)


DIRECTIONS:


DICE CELERY, WHITE ONION, AND CARROTS, THEN SAUTEE IN A PAN ON MEDIUM WITH OLIVE OIL AND SALT AND PEPPER.


PUT VEGGIES IN CROCK POT ALONG WITH POTATOES, ½ THE BACON, ½ THE GREEN ONIONS, BROTH, MUSHROOM SOUP, GARLIC POWDER, & PEPPER.


COVER AND COOK ON LOW 8 HOURS OR HIGH 4 HOURS


LAST 10 MINS ADD SOUR CREAM, MILK AND CHEESE. STIR UNTIL MELTED AND COOK ON HIGH FOR 10 MINS.


GARNISH WITH REMAINING BACON AND GREEN ONION (& MORE SHREDDED CHEESE IF YOU LIKE!)
